Londres y el negocio del desayuno / London and the business of breakfast

La semana pasada estuve en Londres una corta estancia, y como siempre no solo volví con la maleta llena de té sino también con algo nuevo en que pensar.

I was just on a short visit to London last week and as always I came away with something new to think about, besides all the tea that could fit in my luggage. 



Es a decir, el negocio del desayunos, y con eso no sólo me refiero al té de desayuno “English Breakfast”. Todo el mundo desayuna, pero sólo en Londres he visto restaurantes que hacen del desayuno el foco principal de su negocio. El primer lugar que me viene a la mente, que conste uno necesita reservar para ir, es el Wolseley. Hasta diría que fueron ellos quienes empezaron la tendencia de " ir a desayunar”.  Es un lugar muy elegante, de gama alta y costosa.

It's the breakfast business and I am not talking about English Breakfast tea. Everyone has breakfast, but only in London have I seen actual restaurants that make breakfast the main focus of their business. The first one that comes to mind, and that you actually need a reservation to go to, is the Wolseley. I would say they started the trend of “going to breakfast”. Very posh, high end and expensive.



Durante mi estancia, me invitaron a desayunar en un lugar pequeño muy bonito cerca de la estación de metro de Tottenham Court Road, llamado " Honey & Co.". Es un ejemplo perfecto de la combinación de las dos tendencias más nuevas, el desayuno y la comida del medio oriente. Notablemente suelan usar pistachos y bayas en las pastas dulces y berenjenas asados ​​en las saladas. Las estanterías están llenas de mermeladas caseras, mieles, jarabe de datil, tahini y muesli casero. La vitrina está llena de pequeños pasteles, tartas y panes. Al entrar hay el aroma de pan recién horneado y café tostado artesanal. Es un lugar muy acogedor, sencillo, limpio y confortable; ideal para empezar el día.

This time I was invited to have breakfast at a very nice little place close to Tottenham Court Rd tube station, called “Honey&Co.”. Here you have a combination of the two newest trends, breakfast and middle eastern food.  Noticeable in the use of pistachios and berries in their sweet pastries and roasted eggplant in the savoury ones. The shelves are stocked with homemade jams, honeys, date syrup, tahini and homemade granola. The show window is filled with little cakes, tarts and flatbreads. You enter to the aroma of freshly baked bread and artisanal roasted coffee. It’s all very inviting, simple, clean and comfortable, a perfect place to start the day.



Rompiendo con la tradición de los servicios de almuerzo y cena, esto da una nueva flexibilidad a algunos restaurante de ofrecer la alternativa de desayuno y el almuerzo en su lugar.
So breaking from the traditional lunch and dinner service, this gives certain restaurants a new flexibility to offer breakfast and lunch instead.



Y como se suele decir, el desayuno es la comida más importante del día,  así que no lo damos por hecho..
As they say, breakfast is the most important meal, lets not take it for granted

Visitando el mercado de Pike Place en Seattle, WA / A visit to Pike Place Market in Seattle, WA


Yo siempre había querido ir a Pike Place después de haber leído un libro muy popular acerca de la automotivación llamado “Fish”. Recuerdo haber leído que los trabajadores de la pescadería lanzaban a los salmones enteros en el aire, pareciendo más a miembros del Cirque de Soleil que a simple pescaderos.

I had always wanted to visit Pike Place after having read the popular book about self-motivation called “Fish. 
I remember reading about the workers at the fish store tossing whole salmons in the air, making them seem more like members of Cirque de Soleil rather than your typical fishmonger.


 

El mercado es una buena combinación de paradas de pescado fresco, mariscos, carnes y una buena selección de frutas y verduras. También hay las típicas tiendas de souvenir, tal como las de productos artesanales donde tienen una amplia variedad de mermeladas hechas con diferentes bayas y cerezas cuyo el estado de Washington es famoso.

The market is a good combination of real market with fresh fish, seafood, meats and a great selection of produce. Yet you also have your typical souvenirs as well as artisanal products, such as a wide variety of jams made from all the different berries and cherries that the state of Washington is famous for.



La presentación de los pescados y mariscos a la venta es increíble, cientos de cangrejo de Dungeness amontonadas, el color de naranja profundo de la carne del salmón salvaje del río Copper de Alaska, los enormes halibuts y bacalaos negros perfectamente fileteados, todos del mar cercano de Alaska . También ofrecen al menos 5 diferentes tipos de ostras , de diferentes aguas de la región. El “Salmon Candy “ y “Salmon jerky” es otra especialidad,  es el salmón salvaje ahumado, secado y finalmente glaseado, un verdadero bocado delicioso y adictivo!

The display of fish and seafood on sale is incredible, with the piles of Dungeness crab stacked upon each other, the deep orange flesh of the wild salmon from the Copper river in Alaska, the huge halibuts and the perfectly filleted Black cod. They offer at least 5 different kinds of oysters, from different waters around the region. And a must try is the specialty “salmon jerky” and “salmon candy”; wild salmon smoked and glazed, which is a delicious and addictive snack!




Y sí, realmente tiran el pescado! En cuando pedí un filete de salmón salvaje de Alaska del río Copper, oí unos gritos ( que me recordaban a las focas de Marineland, un parque temático del mar) y luego vi el pescado, envuelto de papel, volando por encima del mostrador y aterrizar en los manos del joven que tomó el pedido. Me lo entregó delicadamente y después me fui para mi casa a cocinarlo; que por cierto explicaré cómo lo prepararé en la próxima entrada de mi blog, no lo perdéis!

And yes, they really do toss the fish! As I bought a filet of wild Alaskan salmon from the Copper river, I heard a few yelps (it reminded me of seals at Marineland) and then saw my fish wrapped in paper come flying over the counter and land in the hands of the young man who took my order. He then gently handed it over to me and I went on my way back home to cook it, which by the way, I will explain how I did it in my next blog entry, so stick around!!

Homenaje al rodaballo / Ode to a Turbot


A unos 20 minutos de San Sebastián, después de haber travesado el pueblo costeño de Zarautz- conocido  notablemente por sus surfistas y el Chef popular español Karlos Argiñano- se encuentra un pueblo de pescadores llamado Guetaria . 

20 minutes down the coast from San Sebastian, after passing through the beach town of Zarautz- known for its surfers and one of Spain’s most popular TV chef, Karlos Argiñano- there is a fishing village called Guetaria.





El pueblo de Guetaria te transporta a una época donde existe todavía el arte de pesca tradicional. Una arte transmitida de generación en generación, cuyo familias locales solo han vivido de ella.  Es esta riqueza de tradición pesquera que hace que los restaurantes pueden ofrecer una pesca fresca diariamente traído por los barcos locales.

The town of Guetaria transports you to a time where the art of traditional fishing still exists. It is a place where generations of families have known nothing else and where restaurants offer fresh daily catches by the local boats.




Uno de los restaurantes más famosos de este pueblo es Elkano. Está situado en el estribor de el pueblo, como si el constructor hubiera pensando en un barco más que un restaurante. Al entrar, pasarás por delante de la puerta abierta de la cocina  y unas parrillas grandes encendidas.

One of the most renowned restaurants in this town is Elkano. You can find it at the  the starboard of the town, as if the builder were thinking of a ship rather than a restaurant. As you enter, you walk by an open door kitchen and large grills with hot glowing coals.



Incluso puedes echar una ojada a lo que podrías estar comiendo en breve, cuando el parrillero voltea el rodaballo salvaje gigante, la langosta azul, o cualquier de los otros peces o mariscos locales que estén preparando.

You may even catch a glimpse of what you could soon be eating, as the grill master flips over the giant wild turbot, blue lobster, or any of the other local fish or seafood being prepared.





Una vez sentados y después de un buen aperitivo refrescante y el tiempo de haber estudiado el menú; Aitor Arregui, el hijo del dueño, viene a tomarnos la orden, pero no antes de tomarse el tiempo de explicarnos la filosofía de su padre, Pedro. Yo lo llamo " Una homenaje a el Rodaballo ". Habló de su pasión por el rodaballo y de los esfuerzos invertidos diariamente para encontrar los mejores especímenes de pez para servir a sus clientes; ya que independientemente de lo bueno que sean sus técnicas de cocina, si la materia prima no fuera la altura de sus estándares prefería no servirla. Es por eso que nos puede asegurar que la experiencia deliciosa que tendremos será gracias al pescado en sí y su calidad. No es a menudo que uno encuentra a alguien que tiene sus prioridades tan bien definidas, y quien reconoce la importancia de la bestia antes que el hombre.

After being seated and served a refreshing aperitif and having had the time to study the menu; Aitor Arregui, the son of the owner, comes over to take our order. But first, he takes the time to explain to us his father Pedro’s philosophy. I call it “An ode to the Turbot”. He tells us about their passion for “rodaballo” ( Spanish for turbot); and the daily efforts put into trying to find the best specimens to serve to their customers, as no matter how good their cooking techniques may be, if the raw material is not up to their standards, they would prefer not to serve it. This is why he can assures us that the pleasurable experience we would have is thanks to the quality of the fish itself. It is not everyday that you meet someone that has his priorities so well defined, and who admits the importance of beast before man.




Por supuesto, a parte del rodaballo sagrado, empezamos con la otra especialidad de la casa, las " kokotxas ", unas papada de merluza que se derriten en la boca, servidas de 3 maneras diferentes: a la parrilla, fritas y  en salsa pil-pil .
Cada variedad tan ligera y delicada y a la vez tan distinta debido a su técnica de cocina.

Now of course, besides the sacred turbot, we started off with their other in-house speciality, “kokotxas”, melt-in-your-mouth hake jowls, served 3 different ways: grilled, pan-fried and in pil-pil sauce. Each version is light and delicate, yet so individual due to the different cooking technique.





A continuación nos trajeron un plato muy grande cubierto con un rodaballo salvaje enorme. Pedro Arregui fue un pionero en su forma de cocinar el pescado entero en la parrilla. El pescado se mantiene muy jugoso gracias a sus propias gelatinas; consta que, esto sólo funciona con especímenes salvajes, ya que si uno lo intente con rodaballo de piscifactoría, el pescado suele secarse por su falta de grasas naturales. En cuanto a la degustación, la paciencia es la clave. La mejor parte de el pescado se encuentra al largo de las aletas superiores. Entre cada espina había unas pequeñas joyas de carne blanca que uno debía chupar suavemente para saborearlas. Este un pescado que se puede comer con las manos, cuyo la expresión “ para chuparse los dedos” es muy apropriada!

This was followed by a large platter covered with a very large wild turbot. Pedro Arregui was a pioneer in his way of cooking this whole large fish on the grill allowing its own gelatins to keep the fish very juicy; however, this only works with wild turbot, as if you try to cook farmed fish this way it tends to dry out as it doesn’t have enough natural fats. When its time to get down to business, the best part of the fish is the part where patience is key. All along the back fins are lovely little white jewels of meat, which you must gently suck on and savor. This is a definitely a fish you can eat with your hands and fits entirely the American saying “finger-licking-good”!

Días en Donosti o " Gambaradas en Ganbara "! / Donosti days or “Gambaradas en Ganbara”!


Donostia-San Sebastián es un paraíso para los amantes de la “buena” comida. En que otra ciudad, uno puede dar un paseo por el casco antiguo y encontrarse puerta tras puerta de bares a "pintxos"  abiertos, ofreciendo una variedad de productos en sus mostradores listas para coger y comer. Y que mejor que acompañarlos con un "zurrito" de Txacolí bien fresco, ese joven vino blanco vasco que se combina perfectamente con un buen pintxito!

Donostia (aka San Sebastian) is a “good” food lovers paradise. Where else can you take a stroll through town and walk by door after open door of “pintxos” bars offering their wares on the counters ready to be picked up and eaten on the spot. Wash that down with a fresh “zurrito” (short and stubby type of glassware) of Txacoli, the young Basque white wine and it’s the perfect match!




A veces el trabajo suele ser duro, pero siempre acaba teniendo sus recompensas, sobretodo cuando se trata de 3 días en una feria gastronómica en San Sebastián. Es verdad que no es fácil pasar 12 horas seguidas de pie, hablando sin parar y sin tener tiempo para comer o beber; pero cuando llega la hora de cenar, uno se da cuenta que todo valió la pena!

Sometimes work is tough, but when work is 3 days at a food show in San Sebastian it ends up having its reward. Yes standing for 12 hours straight and talking non stop, not having time to eat or drink, is not easy, but come dinner time and its worth the pain!




Imagina una cena típica en San Sebastián en uno de nuestros restaurantes favoritos, Ganbara , donde el chef Amaia nos prepara una cátara de platos típicos. Para empezar, un plato de pimientas de Guernika salteadas con aceite de oliva y una pizca de sal Maldon . Luego, un plato de setas del bosque de temporada, salteadas y servido con un huevo ligeramente escalfado en el centro. Seguido de unas kokotxas de merluza  ligeramente empanizadas que derretían en la boca ! Y para el broche de oro, un Txuletón de 1,6kg deliciosa y jugosa, preparada a la perfección!

Imagine this, a typical dinner in San Sebastian at one of our favorites, Ganbara, where chef Amaia starts us out with a dish of long thin green peppers known as Guernika peppers that she sautées in olive oil and then sprinkles with Maldon salt. Then they bring out a dish of a variety of wild mushrooms that are in season, sautéed and served with a slightly poached egg in the middle. Follow that with hake jowls that have been slightly dusted in flour before pan-frying, and absolutely melt in your mouth! And for the grand finale, out comes a 1,6 kilo piece of Txuleton ( the special cut of meat served in the Basque country, similar to a T-bone) done medium rare, and oh so juicy!




A pesar de que uno esté lleno, siempre hay un huequito para el postre, especialmente si se trata de las tradicionales “torrijas” vascas. Y por supuesto, no hay postre sin un buen “patxaran”, un licor digestivo elaborado con  endrinas , que se sirve en un vaso ancho con mucho hielo.

You think you can’t anymore, but there is always room for a little dessert, being the traditional Basque style French toast, called “ torrijas” and of course wash that down with a nice big glass of Pacharan, a liquor made of wild blueberries called “endrinas”, poured over lots of ice.




San Sebastián es mi tipo de ciudad, donde se esfuerzan tanto trabajando como comiendo!! 

So you work hard and you eat hard in San Sebastian, that’s my kind of town!
